Sweet Tooth Tuesday; Pumpkin Roll




Here is another one of my favorite recipes using pumpkin. I'm sure there are lots of recipes out there for pumpkin rolls, but here is the one I have. It is best when chilled and very tasty!




Pumpkin Roll:

3 eggs

1 cup sugar

2/3 cup pumpkin

1 tsp lemon juice

3/4 cup flour

1 tsp baking powder

2 tsp cinnamon

1 tsp ginger

1/2 tsp salt


Cream cheese mixture:

1/2 cup margarine

8 oz cream cheese

1 cup powdered sugar

1 T vanilla


Beat eggs on high for 5 minutes. Gradually add sugar. Stir in pumpkin and lemon juice. In a seperate bowl combine flour, baking powder, cinnamon, ginger, and salt, Mix well and fold into pumpkin mixture. Spread onto a wax paper lined cookie sheet. Bake 15 minutes at 375
Turn out onto towel with powdered sugar, roll up towel and let cool. Unroll.
Spread with cream cheese filling. Roll up and wrap with clear wrap. Chill. Slice to serve.

Pumpkin Roll is delicious! I've tried with whipped cream & toffee chips as the filling-took on a whole new taste :)
