Best Ever Cinnamon Rolls
Bun Dough:1 TBSP active dry yeast
1 C warm milk
1/2 cup sugar
1/3 c margarine, melted
2 eggs
4 cups all purpose flour
1 tsp salt
Filling:
1 C packed brown sugar
2 1/2 TBSP cinnamon
1/3 C margarine, softened
Icing:
1/2 C margarine, softened
1 1/2 C powdered sugar
2 oz cream cheese, softened
1/2 tsp vanilla
1/8 tsp salt
In a large bowl, dissolve yeast in warm milk. Add sugar, margarine, eggs, flour, and salt. Mix well. Knead using your hands dusted lightly with flour. Put in a greased bowl, cover, and let rise in a warm place for 1 hour. Roll out dough on a lightly floured surface into a flat rectangle 21 inches long, 16 inches wide and 1/4 inch thick. For the filling, combine brown sugar and cinnamon. Spread softened margarine evenly over the surface of the dough, then sprinkle with the cinnamon/sugar mixture. Carefully roll the dough down to the bottom edge. Cut the rolled dough into about 2 inch pieces and place 6 at a time, evenly spaced, in a lightly greased 9X13 pan. Bake at 400 degrees for 10 minutes or until light brown on top. While the rolls bake, combine icing ingredients. Beat well with an electric mixer. When the rolls come out of the oven, coat each generously with icing. Makes 12.
