There is nothing better in my opinion than a good old turkey sandwich for lunch. When you combine that with some avocados and tomatoes it is heaven!!! I orginally found the recipe for this sandwich on this site. The orginal recipe calls for mozzarella cheese, but I used provolone and I didn't grill my bread, instead I toasted it by putting it in the oven on broil. This sandwich can be made easily with leftover turkey from Thanksgiving dinner or sliced turkey breast lunch meat. Either way is absolutely delicious! Try it out and let me know what you think!
Turkey Pesto Sandwich
- 1 loaf French bread cut into 3-4 equal pieces
- 1/2 cup pesto, homemade or store-bought
- 4-8 oz sliced provolone (orginal recipe calls for mozarella)
- 2 cups chopped turkey or thin sliced turkey
- 2 roma tomatoes, sliced
- 1 avocado, sliced
Directions:
Turn oven on broil, place bread with cheese on one half and turkey on the other half on a cookie sheet. Remove from oven after 3-5 minutes. Make sure to keep an eye on your bread during this time so you don't end up burning it. Bread should be lightly brown and cheese melted. Spread pesto sauce over cheese. Add avocado and sliced tomato on top of turkey. Fold your sandwich down and enjoy!
