Apricot Glazed Pork Roast

Should i start this post with by the way i am CHEAP and i LOVE MEAT!!!! The other day i was shopping in our local grocery store called Macys and i saw their Dinner in a Bag deal. I got to sample it and it was fabulous so i went a little over my remaining budget and bought the deal.  It was $18.00 for the whole meal, but we had sooooo much meat we cut into 3 pieces the size you see in the picture. And the meat alone would have cost $14. We froze the other 2 sections for another meal. This sale is going on until June 12 so if any of you wan to snag it before it is over run NOW! :) My family really loved it and i loved the ease of the crock pot meal. If you dont live near a Macys just grab the ingredients and toss it all in a Crock Pot.
I dont know why i took a pic of the fatty side of the meat but i swear it had minimal fat and super yummy

Apricot Glazed Pork Roast                        

1 can Chicken Broth
18 oz Jar of Apricot Pineapple Preserve
Medium Onion Diced
2 Tbsp Dijon mustard
1 ½ - 2 Lbs boneless Pork Loin Roast

Put everything except the meat in the crockpot and stir together. Add the roast and coat with the mixture. Cover and cook on high for 4-5 hrs or until Pork is tender. We served with mashed potatoes and used the leftover sauce as the gravy. 


No clue why this is side ways but i tried everything to flip it and i cant so if you know how to fix it leave me a message :) 
 Eat and Enjoy I know it sounds like an odd mix but it is Fabulous!!
