I found the recipe for these fun cookies at www.thecurvycarrot.com. I made these for a recent family gathering and all the kids loved them! I got thinking that these would be great to make this Valentines Day with your kiddos or even for that special someone in your life.
Chocolate Thumbprint Cookies
(makes around 2 dozen)
Ingredients:
- 2/3 cup butter, softened
- 1/2 cup sugar
- 1/4 cup cocoa
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 egg
- 1 tsp vanilla
- 1 1/4 cups flour
- 3/4 cup sprinkles ( pink and/or red would be cute for Valentines Day)
- Chocolate kisses, unwrapped
Instructions:
Preheat oven to 375 degrees and line two cookie sheets with parchment paper. In a large bowl beat butter for about 30 seconds. Add sugar, cocoa powder, baking soda, and salt, Beat til combined, scraping the sides of the bowl. Beat in the egg and vanilla til combined. Beat in flour. Form and roll dough into 1-inch balls and then roll in the sprinkles. Place dough balls about 2 inches apart on cookie sheet. Make a small indent with your finger in the center of each cookie. Bake 7-8 minutes or until edges are firm. Place a chocolate kiss in the center of each cookie immediately after removing the cookies from the oven. Transfer the cookies to a wire rack to cool completely.
