Hey! I'm Sherri...and

I am Sherri. My husband's name is Nathan, and we have a 4-year old son, Brooklyn. Nathan and I have been happily married for 7.5 years. This...is me!

I am currently attending Weber State persuing a Bachelor of Fine Arts, with an emphasis in Fine Art Photography. I feel like I will NEVER be done with school. In my spare time, I enjoy crafting, cooking desserts, (Nate is the gourmet chef around here. Even though I like to cook regular food, desserts are SO MUCH more fun right??) gardening, reading, music and movies.

This...is Nate. I seriously cannot find a good picture of him. He ducks out of every photo, and hates to get his picture taken! But he loves football, and so I convinced him to let me take this one. Ha ha!

This is Brooklyn, a.k.a. Brooky, Brooky-pants or Brook-ster. He is so fun! He also gets sick of me taking photos of him, so it is a rarity to find one of him where he is not making a silly face. He cracks us up. He is OBSESSED with Batman.Just a little about me. I am so excited to be a part of this blog! I can't wait to get good ideas from all of you, and get to know you all better. I love blogging...this is one of 4 blogs that I have/work on!

Foodie Friday: Orange Granola

So I figured for my weekly contribution, I would post a little something-something that would make us feel a little bit better, especially after so many good yummy treats.  I discovered granola about a year or two ago, and the stuff does not last in our house.  I love the Orange & the little extras in this granola-very fullfilling.

Orange Granola

I wanted to keep this granola very simple & I wanted the granola to have mucho orange flavor.

I made up a orange simple syrup that I would use as the liquid ingredient to combine the dry ingredients.

I added Oatmeal, Shredded Coconut {because my husband & I like the added crunch & texture}, and Golden Raisens {because that's what I had in my pantry}.  If I had some almonds, I think I would have added that to the bunch.

I threw everything on a greased baking sheet and baked it for about an hour.  I made sure to mix it up every 15-20 minutes to keep it from sticking.

I love eating this with some Vanilla Yogurt for breakfast {or Midnight snack}; it's a great way to start off the day.

Creamy Chicken Taquitos

C
Here is one of my favorites!!  The family loves it too.  When I make these, I try to make extra so I can freeze them for later, but somehow, I never have any left to freeze, even with a double batch.  What I love about this is that they aren't fried, but baked, so that right there cuts back on a lot of the calories.  This is an example of a favorite recipe that I revamped to make it a bit more on the healthy side.  You must try these!!  I promise, you won't be disappointed.
4 oz fat-free cream cheese (can use regularif you'd prefer)
1/4 cup salsa
1Tbsp fresh lime juice
1/2 tsp chili powder (you can add more if you like a kick, but I'm a wimp)
1/2 tsp onion powder
1/4 t granulated garlic, or garlic powder
3 Tbsp chopped cilantro
2 cup shredded cooked chicken (I cook it in broth)
1 cup mozzarella cheese
1 4 oz. can diced green chilies

corn tortillas or flour tortillas
non-stick cooking spray
salt

Preheat oven to 425.  Mix everything but tortillas together in a bowl. Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing.  Place about 2-3 tbs. of the mix on each tortilla and roll up as tight as you can.  Place seam side down on a baking sheet.  Spray with non-stick cooking spray.  Sprinkle with salt.

Bake in oven for about 15 minutes, or until ends get brown.  Enjoy!
Serve with sour cream, salsa, or ranch.

I made both corn and flour tortillas and we actually preferred the flour ones better.  They were crispier.
