Foodie Friday: Egg Drop Soup


This is such an easy Egg Drop soup and my kids LOVE it! Sorry i don't have a good finished product picture. I forgot to take it amid the mix of birthday chaos on this day. :) Remember my daughters 8th birthday party? This is the soup we had with our dinner.

Egg Drop Soup

4-6 C. water                                      Pinch of red pepper flakes (optional for spice)
5-6 bullion cubes                               ½ tsp seasame oil (left out once)
1 C. chopped carrots                        2-4 Tbsp olive oil
1 C. frozen peas                               4 beaten eggs
2 Tbsp soy sauce                              ½ bunch green onions, chopped
½ Tbsp rice vinegar (used regular)

Place all ingredients except the eggs, green onions and the peas in a large pot.  Bring to a hard rolling boil. Let it just keep on boiling until carrots are tender.  Add your peas and let it boil until they are heated through only about 2 minutes.  Add your eggs while the soup is still at the hard rolling boil.  They should cook up pretty fast.  Remove from the heat when the eggs are cooked and add your green onions. 


P.S. our bedroom remodel is going really slow but man is it going to be amazing i can't wait to show you ALL!!
