Wild Card Wednesday:Beef and Barley Stew




My kids hate soups but I decided I want to make more and get them to like them. I made this Fabulous stew from Rachel Rays magazine for this month. My husband LOVED the stew and said it was the best he had eaten!! YAY!! Kids ehhh not so much but when mom and dad love it I guess they will have to just suffer with it again and again :) It was super easy to make and basic ingredients you might just have on hand.

Beef & Barley Stew    
1 lb ground beef                               6 C. beef broth            
1 onion, finely chopped                    3-5 carrots, sliced
2 cloves garlic, minced                     3-5 celery, sliced
1 can stewed tomatoes                      2/3 C. barley
1 tsp oregano                                     ½ C. chopped parsley

Cook ground beef over medium then lower the temperature and add the garlic and onion. Cook until the onion is translucent about 10 min. Stir in the tomatoes and oregano and bring to a simmer over high heat. Stir in the broth, carrots, celery and barely and return to a simmer. Lower heat and cook until the barely is very tender, about 1-1 ½  hour. Stir in the parsley; season with salt and pepper
