SweetTooth Tuesday: Pineapple Upside-Down Cake

This is my husbands favorite cake.  Since it was his birthday I decided to make it for him.  It is currently in the oven and is smelling oh so yummy. 

Here is what you will need:
-Yellow cake mix
-ingredients required to make cake mix (water, oil, eggs)
-1/4 cup raw unsalted almonds ( chopped up very finely, I used my food processor)(optional)
-1 Tablespoon of almond extract(optional)
-1/4-1/2 cup of butter
-brown sugar
-1 20 oz can of sliced pineapples
-1 can of maraschino cherries (optional)

Directions:
1. Make cake as directed on cake mix
2. chop up almonds in food processor
3. Add almonds to cake mix
4. add almond extract
5. cut up butter into small pieces and spread around 9/13 pan
6. spread brown sugar all over pan
7. Put in oven to melt butter
8. take out once melted and mix the brown sugar and butter together and spread evenly around pan
9. Put in pineaple.  I used 8 whole and 2 half ones to make them fit.
10. put cherries in center of pineapple
11. Poor cake batter over pineapple
12. bake in oven as directed by cake mix box
13. As soon as cake is done take out of oven and place a cookie sheet over the cake and turn upside down and carefully remove pan.
