Foodie Friday: Fabulous White Chili!

This recipe is super easy. I adapted the original recipe (which I got from a dear friend..Thanks Machelle!) which was a pan recipe, and changed it to a slow cooker recipe...which made it even easier.

1 can Chicken broth
1 lb. chicken breast
1 medium onion, chopped
1 minced garlic clove
1 Tbsp. oil
5 cans small white beans
1 can dark red kidney beans
1 can diced mild green chilies
1 tsp. salt
1 tsp. oregano
1/2 c. heavy cream

Saute onion and garlic in oil, then add chicken and cook through.

Dump chicken, onion and garlic, with all the other ingredients in a crock pot (except for the cream), and cook on low, for 6 hours. during the last half hour, add the cream and mix well.

I topped the chili with cheddar cheese and tortilla chips. DELISH!!
