Wild Card Wednesday:Barbie Birthday Cake

So my little girl just had her 3rd birthday and this year she got got a barbie cake. She absolutely loved her barbie cake and had a really fun birthday. These cakes are surprisingly not too hard to make-as long as you have the right stuff for decorating.

To make a barbie cake you should first:
  • Buy a barbie cake kit. I have also heard that you can use the Pampered Chef Classic Batter Bowl to make the skirt. The Barbie Cake kit usually comes with a barbie pick to put in, but I bought a different barbie to put in.
  • Invest in a cake decorating kit. You can find these at any craft store like Michaels or Joanne's. I bought a basic Wilton one that was around $30. For this cake I used wilton frosting tips 3 (for polka dots, the 3, and the flowers centers), 16(small flowers), and 21(big flowers).
Once you have these two things then the fun begins. For this particular style of Barbie cake I made I did part of it the night before. On the Barbie's dress are flowers which are made out of a harder type of frosting. I made these flowers using tips 16 and 21 with Wilton Royal Frosting. I used about 50 large flowers and 70 small flowers. You'll want to make a few extra in case they end up breaking. I also baked the cake the night before. You want to make to sure to grease and flour the pan really good. I baked mine at 375 degrees for 1 hour and used two boxed cake mixes.

To make the Royal Icing you'll need:
  • 3 Tbls Meringue Powder mix (can be found at Kitchen Kneads)
  • 6 Tbls water
  • 4 cups (1lb) Powdered Sugar
  • Beat 7-10 minutes. Once you have made the flowers and they are completely dry you will attach them to the frosted skirt along the bottom of the dress, the waist, and the shoulders of the barbie with dots of buttercream frosting.


I ended up making a buttercream frosting to frost the skirt, make the top portion of the dress
, and to make the polka dots.


For the buttercream frosting you will need:
  • 1/2 cup vegetable shortening
  • 1/2 cup softened butter
  • 4 cups (1lb) powdered sugar
  • 2 Tbls milk
  • 1 tsp vanilla
Cream butter and shortening. Add vanilla, Gradually add sugar, one cup at a time. Frosting will be very dry. Add milk. Beat til light and fluffy. Refridgerate any left over. (I used all of the frosting, but some people don't like that much frosting)

Have fun creating. The style of dress is endless! These cakes take a little bit of time to make, but your little girl will absolutely love them!
